Jason Schwartze of Moonglade Ginger Beer is hoping to be brewing ginger beer at his own facility in Oceanside by the end of September, having just signed a lease at 102 Copperwood Way this week.
This week also marks his first opportunity to commit full-time to the venture.
“I used to work as an inspector for the agriculture department of San Diego,” he says. “So I’m skilled at researching regulations, understanding sanitation requirements, just how to do everything proper.”
Schwartze says he started the company because he doesn’t drink alcohol, has always wanted to own his own business, and couldn’t find a ginger beer he really liked… so he decided to brew his own.
If all goes to plan, Schwartze and his family support team will open a small storefront for tasters, growler fills, and keg orders by the end of this year. The Oceanside location will also house a small bottling line for filling, labeling, and packing 12-ounce bottles.
When up-and-running, the Moonglade brewery will produce 10 barrel (300 gallon) batches from purified spring water, organic ginger root, organic cane sugar, organic lemon juice, plus a symbiotic culture to facilitate fermentation, while staying under .5% alcohol. Schwartze sources ginger root from local wholesale distributor Specialty Produce.
For now, offerings brewed in a separate, licensed space include Oside Original Ginger Beer, 3x Overhead Extra Hot! Ginger Beer, and seasonal varieties incorporating fruits like mango and pineapple.
Other products under development include a probiotic root beer, as well as an even stronger-flavored ginger beer. “I work the Solana Beach, Encinitas, and Vista farmers markets, and some people just can’t get enough ginger flavor.”
